Single bowl gives you one uninterrupted space, which matters more than people expect — a roasting pan or a baking sheet will not lie flat in a divided sink. If you cook seriously, this is usually the right call.

Double bowl lets you separate washing from rinsing, or keep dirty dishes out of sight on one side. Useful in a household without a dishwasher, or where two people work in the kitchen at once.

Bar sinks are compact secondary sinks for islands, butler's pantries and wet bars. Pair one with a bar or prep faucet scaled to match.

• Stainless steel — the workhorse. Look at the gauge (16 gauge is thicker and quieter than 18) and whether the underside is sound-dampened. A cheap thin sink drums under running water.
• Fireclay — glazed ceramic fired at very high temperature. Deep, bright and heavy; resistant to staining and heat, but it will chip if you drop a cast-iron pan into it.
• Granite composite — quartz particles in resin. Warm to the touch, quiet, and available in colours that stainless cannot do.

Undermount sinks must be templated to the countertop, so the sink is normally chosen before the counter is fabricated — your fabricator will want the physical sink or its template in hand. Check the cabinet width too: a 33" sink needs a 36" base cabinet. And confirm whether the sink is drilled for faucet holes at all; most undermounts are not, because the faucet goes through the counter.

What countertops work with an undermount sink?
Any solid material with a sealed, finished edge — granite, quartz, marble, solid surface and butcher block. Laminate is generally not suitable, because the exposed particleboard core at the cut edge will swell when it gets wet.

What size base cabinet do I need?
As a rule, three inches wider than the sink. A 30" sink needs a 33" cabinet, a 33" sink needs a 36". Check the specification sheet for the exact minimum, since it varies with rim design.

Do undermount sinks come with faucet holes?
Usually not. Because the sink sits below the counter, the faucet is drilled through the countertop itself, and your fabricator drills it to suit the faucet you have chosen — so pick the faucet before the counter is cut.

Single bowl or double bowl?
Single bowl if you regularly wash large pans, sheet trays or oven racks. Double bowl if you want to separate tasks or do not have a dishwasher. Single bowl has become the more popular choice in new kitchens.
